1 pack of Vegie Delights Tender Fillets
2 teaspoons peri peri seasoning
2 tablespoons olive oil
Rice
2 cups cooked rice
200g cherry tomatoes, halved
1/2 cup fresh coriander leaves
1/2 cup corn kernels, drained
1/3 cup peri peri sauce
Method
Prepare rice.
Combine all ingredients in a large bowl
Combine olive oil & peri peri seasoning – brush fillets until well coated
Cook tenders following on pack instructions
Season to taste and serve with extra peri peri sauce
